Ross' frozen beefburgers list "Beef heart" amongst their ingredients so I refuse to (or can't make myself) eat them.
Having eaten beef heart without having it ground up in a hamburger, I'd really have no issues with eating it as part of a burger. My mother just boiled it up in a pot. Sliced thin with a little mustard, and it's okay stuff, though not exactly the most tender of cuts.

Sausages? Sheesh, most folks would never eat them if they knew (or thought about) what went into those.
"By-products". Whatever that means. Doesn't bother me that much. I've eaten pig's ear, haggis (though probably not the really good stuff, since this was in Toronto, not Scotland), and chicken feet. I haven't tried head cheese, yet, but then, I haven't been anywhere where it's been offered.
