This is one area I need to explore more. I'm fine with goat cheese, so it's become a favorite replacement for other kinds of cheeses I can no longer enjoy. I tend to always have one of the spreadable Chavrielittle pyramid containers in the fridge to snack on.

Back when I could enjoy cheese, swiss tended to be my favorite. Found excuses to have it on a ton of things.
