256MB is enough. Plug in the new monitor and see what it does. Lower rez output from the video card won't harm anything, other than your eyes.

In practice, I expect the card you have will do the 1920x1080 once connected to the new screen.

Maybe also check with NVIDIA for a driver update. They've had quite a few releases / enhancements over the years.
